Khushka Rice


Khushka is a great masala rice. This is made differently in different regions. Soya chunks, green peas or eggs can also be added. This tastes wonderful when made plain too.




Ingredients :
— Basmati rice - 2 ½cups
— Onion - 1 big
— Tomatoes - 2small
— Ginger - 1 inch
— Garlic pods - 2-3
— Chopped corriander 
— Green chillies - 4-5
— Cashews 
— Ghee 
— Oil
— Biryani masala spices (bay leaf, cloves, marathi mogga, nutmeg powder, cinnamon, star anise
.. ) 
— Water
- Grated coconut - 1tbsp 

For Raita :
— Chopped onions
— Chopped tomatoes 
— Grated carrot 
— Curd
— Salt
— Chat masala
— Water

Recipe :

1. In a pressure cooker heat some oil, add 3-4 cloves and a piece of cinnamon. 

2. Add ginger, garlic and green chillies. Fry for 2mins.

3. Add half roughly chopped onion and fry till it becomes translucent.

4. Add tomatoes, grated coconut and corriander. Fry till it becomes mushy.

5. Take it off and blend into a smooth paste when cooled.

6. In the same pressure cooker, add some ghee and oil. When heated add the biryani spices and let them fry.

7. Add cashews and fry for a minute.

8. Add fine chopped onions and slit green chillies.
Fry until the onions are nicely fried. 

9. Then add chopped tomatoes and fry till tomatoes are soft.

10. Now add the blended paste of onion tomato.

11. Add turmeric, salt, chilli powder, garam masala and mix.

12. Instantly grate a nutmeg and add 1tsp of it to this masala.

13. Cook this till oil oozes out. 

14. Add washed basmati rice to this and mix without breaking the rice. 

15. Add 5 cups of water and check the spices. Add chopped corriander. 

16. Pressure cook for 1-2 whistles.

17. Take curd and beat without lumps with very less water. Add chopped onions, tomatoes and grated carrot.

18. Add required salt and chat masala. Mix and it is ready to be served with Khushka rice. 


Tasty Khushka rice is ready to be plated.
