Butter Lemon Cookies

Lemon cookies taste tangy and sweet. These stand apart from the very regular style of cookies. 
A great taste to try on. 



Ingredients :
— All purpose flour / Maida - 2 cups
— Salt - 1/2 tsp
— Baking powder - 1/2 tsp
— Butter - 1 cup
— Confectionery Sugar - 1 cup
— Lemon juice - 3 tbsps
— Lemon zest

Lemon buttercream frosting :
— Butter - 4 tbsps
— Confectionery Sugar - 2 cups
— Lemon juice - 1/2 cup
— Lemon zest

Recipe :
1. Mix All purpose flour /Maida, salt and baking powder together and keep aside 
2. In another bowl, start beating the butter to make it soft. Add sugar and start beating it together.
3. Now add flour mix in batches and mix properly.
4. Then add lemon juice and lemon zest ( grate the lemon peel into the mix). Add little zest and mix. 
5. Now refrigerate the cookie dough for 1 hr or till it hardens up.
6. After the dough gets hardened, slice the dough and if you want you can make balls and press little to make round shapes or leave them as squares.
7. Bake them at 350 F for 8 - 10mins. The bottom of the cookie should be little brown and surface should be white.
8. Demould after 2-3 mins or else they might break up completely. If the base becomes black you can grate the base slightly.

9. Now these taste great as is, you can also frost the cookies for a different lemony flavor.

10. Lemon buttercream Frosting : In a bowl, beat butter and batches of sugar.
11. Add lemon juice and lemon zest and mix properly. Make it little running with lemon juice. 
12. Dip the surface of the cookie and place aside or refrigerate till it dries. 
13. Enjoy the pleasure of the tasty lemon cookies with or without frosting.
