Dahi Wada





Ingredients:
For Wada
Whole Urad dal - 2 Cups
Water - to soak
Salt - as per taste
Oil - to fry

For Dahi
Curd- 3 cups
Turmeric -1/2 Spoon
Water -1 cup
Salt- as per taste 
Ginger - 2 inches
Green Chillies- 10

Tempering
Split Urad Dal - 1/2 tspoon
Mustard seeds - 1/2 tspoon
Jeera - 1/2 tspoon
Ajwain-  1/4 tspoon
Curry leaves- 1 Strand
Red Chillies 3 -cut into pieces



Process:

Intially keep Dahi ready , then make wada
For Dahi:
1. Take curd, and water into larger bowl, churn slighlty to make thick buttermilk
2. Grind ginger and green chillies coarsely in mixie
3. Now add this and salt to buttermilk

4. Heat oil in small kadai, add tempering items , let splutter

5. Add this tempering to the above buttermilk mix with ginger nd chillies paste

6. Mix well, adjust salt and spice as per your taste, add turmeric powder 

For Wada:
1.Soak Whole Urad Dal for 4 hrs
2. grind it to smooth paste with little water, add salt mix well
3. Now heat oil in kadai for deep frying
4. Then make wadas on plastic cover (I used  milk packet)
5. gently drop them into hot oil
6. fry them till golden brown , drain them and set aside for 4-5 mins, till they are cooled slightly

Finally Dahi Wada:
Add wadas into the Spiced Dahi

Note:  make sure 
1. Wada is still warm but not too hot
2. there is enough space for the wadas in bowl, because on soaking they increase in size

Let soak for 6-8 hrs, garnish with chopped coriander

Ready to eat...
