Simple Veg Pulav ~ A one pot meal



One pot meals are quick and easy to make and taste bliss.. Check out a simple pulav recipe here..



Ingredients :
— Onions - 1/2 cup
— Tomatoes  - 1/2 cup
— Mixed vegetables of your choice - 1/2 cup each (Carrots, potatoes, beans, peas, corn) 
— Biryani dry spices
— Curd - 1/2 cup 
— Salt 
— Turmeric powder 
— Coriander powder
— Garam masala 
— Nutmeg 
— Washed Basmati rice - 2 cups
— Water - 4 cups
— Oil - 2 tbsps
— Ghee - 2 tbsps
— Cashews
— Raisins
— Ginger garlic paste / chopped / grated
— Green chillies - 5-6
— Soya chunks / Meal maker
— Kasuri methi - 1 tsp

Recipe :

1. In a pressure cooker, heat 2 tbsps ghee and 2tbsps oil. Add biryani spices, cashews, raisins and fry.
2. Now add ginger garlic and green chillies and fry.
3. As nice aroma comes, add onions and fry till they become transparent.
4. Add chopped tomatoes and fry. 
5. Now add your choice of vegetables and mix.
6. Now add all the spices like salt, turmeric powder, chilli powder, corriander powder and mix.
7. Grate some nutmeg into this and also add curd, garam masala. 
8. Add meal maker and mix.
9. Add washed basmati rice and mix without breaking. Let this fry for 2 mins.
10. Add chopped coriander and 4 cups of water. Adjust the spices.
11. Pressure cook for 1 whistle.

12. Hot and yummy pulav is ready to be plated. Serve with raita.
