Sweet and Spicy Corn Pulav ~ One pot meal


With the sweetness of kishmish and spiciness from chillies this corn pulav is an absolute delight to serve.. 



Ingredients :
- Corn - 2 cups
- Roughly chopped Onions - 1 cup
- Slit green chillies - 6-7
- Ghee - 2 tbsps
- Oil - 1 tbsp
- Ginger garlic paste - 1 tsp
- Cashews - 1/4 cup
- Kishmish - 1/4 cup
- Salt - As per your taste
- Chilli Powder - 1 tsp
- Garam Masala - 1 tsp
- Coriander powder - 1 tsp
- Curd - 1/4 cup
- Basmati Rice - 2 cups
- Water - 3 1/2 cups.
- Fresh chopped coriander 
- Kasuri Methi - 1 tsp
- Biryani Dry Masale (Cloves, Star Anise, Cinnamon stick, Biryani stick and Bay leaves, grated nutmeg powder)

For Raita :
- Curd - 1 1/2 cup
- Chopped onions - 1/4 cup
- Chopped tomatoes - 1/4 cup
- Grated carrot - 1/4 cup
- Water - 2 tbsps
- Salt
- Chat Masala - 1 tsp
Recipe :

1. Heat a pressure cooker with ghee and oil. Now add all the biryani dry masala pieces. Let them fry for a minute.
2. Now add cashews and raisins fry for a minute. Then add the slit green chillies and chopped onions.
Fry til onions become translucent.
3. Add ginger garlic paste and fry for 2 mins till the raw smell wades off.
4. Now add the corn and mix.
5. Add salt, chilli powder, dhaniya powder, garam masala, Mix them and fry for 2 mins.
6. Add curd and mix. After you see oil oozing out add washed basmati rice and fry for a minute.
7. To this pulav add water and check for spices. Add chopped coriander and kasuri methi as well.
8. Close the lid and cook for 1 whistle.

9. Raita : To the veggies add thick curd and mix. Add salt as per your taste and chat masala. Check for the taste and thickness. Adjust with little water.
10. Serve hot sweet and spicy corn pulav with raita.
