Eggplant Meal Maker / Brinjal Meal Maker



King of the vegetables -  Eggplant / Brinjal / Vankai.
 Any dish made out of this has a great place in the menu. This simple Eggplant Meal maker will taste great with rice or rotis. 




Ingredients :

- Chopped Eggplants / Brinjal - 2 cups
- Meal Maker / Soya Chunks - 1 cup
- Chopped Onions - 1 cup
- Ginger garlic paste - 1 tsp
- Chopped green chilies - 4-5
- Jeera - 1 tsp
- Mustard seeds - 1 tsp
- Channa dal - 1 tsp
- Urad dal - 1 tsp
- Oil - 1 1/2 tbsp
- Salt - as required
- Turmeric - 1/2 tsp
- Chilli powder - 1 tsp
- Dhaniya Powder - 1 tsp
- Jeera powder - 1 tsp
- Garam Masala powder - 1 tsp



Recipe :

1. Soak soya chunks or meal makers in hot water for 15mins.
2. In a frying pan heat oil and add jeera, mustard,channa dal, urad dal and green chillies.
3. Add chopped onions when seeds splutter. Fry till onions become translucent and then add ginger garlic paste.
4. When raw smell is gone, add chopped brinjal and mix.
5. Add salt, turmeric and mix. Close the lid and cook till the brinjals turn soft.
6. Squeeze out the water from the soaked soya chunks and add to the curry and fry.
7. Add all the spice powders and mix. Close the lid and let it cook for 10 mins.
8. You can add fresh coriander and serve .

Serve with rotis or rice
