Apple Seviyan ~ Caramelized



Seviyan or Semiya is a very easy sweet dish that can be prepared in no time. Flavored and caramelized, is a twist to eat the old seviyan in a new style. 



Ingredients :
- Grated Apple - 1 cup
- Sugar - 1 cup
- Fresh Cream - 1/2 cup
- Roasted Seviya or Semiya - 1 cup
- Milk - 2 1/4 cups
- Ghee - 3 tbsps
- Cashews - 10- 15 broken
- Elaichi Powder - 1/4 tsp

Recipe :

1. Clean, peel and grate an apple.
2. In a pan heat 1 1/2 tbsp of ghee and fry the grated apple. Fry till the ghee is absorbed by the apple.
3. Now add 1/2 cup sugar and turn the heat to low and let the sugar crystallize. To avoid burning the apple add 1tbsp more of ghee and let it start caramelizing. 
4. Add 1/2 cup of fresh cream and let the apple cook along. Keep stirring to avoid lumps and let this slowly cook till it is leaving the edges of the pan. 
Caramelized Apple is all ready.
5. Heat milk in a saucepan and when it is all boiled, add the roasted semiya or seviya. The seviya will float when cooked. 
6. Add 1/4 cup of sugar now and cashews. Mix well and wait it boils once more.
7.  Now you can add the caramelized apple to this. Mix well and break up all the lumps. Cook for 5 mins with elaichi powder.
You can always adjust the consistency with milk and sweetness with sugar. 
Enjoy hot or cold....
