Stuffed Bell Peppers & Mushrooms ~ A Side Dish

 

Healthy stuffed veggies are great side dishes with rice or pulavs. These can be great snacks too.. 


Ingredients :

- Capsicum / Bell Peppers - 3-4 ( Baby or Norma)

- Mushrooms - 4-5

- Potato - 1 big

- Chopped Onions - 1/2 cup

- Chopped green chillies - 3-4

- Green Peas - 1/4 cup

- Turmeric Powder - 1/2 tsp

- Salt - as required

- Jeera Dhaniya powder - 1 tsp

- Chilli Powder - 1 1/2 tsp

- Ginger Garlic paste - 1 tsp

- Oil 

- Water

- Besan - 2 tbsps

For Tempering -

- Jeera - 1/2 tsp

- Mustard seeds - 1/2 tsp

- Channa dal - 1/2 tsp

- Urad da - 1/2 tsp

- Hing / Asafoetida - 1/2 tsp


Recipe :

1. Boil the potato with salt and mash it when cooled.


2. Heat a pan with 1 1/2tbsp of Oil and add the tempering ingredients except hing. When seeds splutter add hing.


3. Add the green chillies and onions. Fry till onions become translucent and add ginger garlic paste and fry till the raw smell wades off.


4. Now add the mashed potato and green peas. Add all the spice powders and fry for 5mins.


5. Sprinkle some water and close the lid. Turn off the heat.


6. Now chop the crown of the bell pepper and remove the seeds. Fill in the stuffing. 


7. For mushrooms remove the leg and fill the stuffing inside. 


8. Dip the curry side into the dry besan and shallow fry them.


Enjoy as a side dish with rice or pulavs.
