Mamidikaya Menthi mukkal / Mango Methi Chutney

 Mangoes .. a must and should culinary item  for every Telugu family.... People jus can't wait to relish on this either raw or ripe...

There are many items prepared using this raw or ripe.. let's see one of the favourite item in Andhra using Raw Mango... Menthi mukkalu....

Though this has a less shelf life.. people start cooking this recipe when ever they get a raw mango .. either summer or rainy season... A great and delicious accompaniment with rice

Shelf-life :
-- without refrigeration, 1 week 
-- with refrigeration 15 days

Note: Always use clean nd dry utensils while preparing, storing and serving for better shelf-life. 



Ingredients:

Mangoes -2
Turmeric - 1/2 tsp
Red chillies - 12-15
Salt - as per taste
Hing- 2 pinches
Mustard seeds - 3 tsp
Methi seeds - 1/4 tsp
Sesame oil - 100 ml

Process:
1. Heat Kadai, add 3 spoons of oil , add methi seeds, mustard seeds and red chillies one after another after, fry till aroma starts coming Add Hing. Transfwr into a dry plate, Set aside and let them cool. 

2. Mean while clean mangoes peal and chop them into small pieces. 

3. Now grind the cooled spices coarsely in a blender or mixie. 

4. Now add turmeric powder, salt, spice powder and mix well. 

5. Now add balance sesame oil to the above mix. 

6. Mix well. 

7. Menthi mukkalu is ready, store in a dry jar. 
Can have it immediately or Leave for 7-8 hrs (this is more tastier)

This goes great as is with hot rice and ghee
                                  OR  

As a side dish for Dal / curd rice

Malabar Spinach / Bachali kura  is widely part of the traditional Indian cuisine. These green leaves are rich  in vitamin A , C , iron and calcium. They give immense benefits to the body when eaten in right  quantities. The well known Andhra dish is Kandha Bachali Koora.... Godhuma Atlu / Atta Chilla / Wheat Dosa is a healthy dosa which doesn't require any fermentation. This has quite a unique taste than the usual varieties.
