Chocolate Mayo Cake ~ Soft & Spongy




You will definitely love this Chocolate Mayonnaise Cake, if you like flavor loaded cakes. Mayonnaise makes the cake soft and moist. This can be made with egg based or vegan based Mayonnaise.

This cake is made on the occasion of my beautiful co-blogger Sushma's birthday.

Ingredients :
 
- All Purpose Flour / Maida - 2 cups
- Sugar - 1 1/4 cup
- Cocoa Powder - 1/3 cup
- Baking Powder - 2 tsps
- Mayonnaise- 1 cup
- Water - 1 cup
- Salt - 1/2 tsp
- Vanilla essence - 1 tsp

 For Chocolate Frosting -

- Softened Butter - 1 cup 
- Cocoa Powder - 2/3 cup
- Salt - 1/2 tsp
- Confectionery sugar - 2 cups
- Vanilla essence - 1 1/2 tsp
- Milk - 1/3 cup (at room temperature)


Recipe :

1. Swift all the dry powders - maida, cocoa powder, baking powder in a mixing bowl. Also add the sugar and mix them all together. 
Cake mix is all ready.

2. Add the mayonnaise and using a spatula mix in well. There should be no lumps left out.


3. Now add the vanilla essence and also add water little by little. Whisk in to form smooth batter.


4. Grease the cake pan and layer it with parchment paper. Pour in the cake batter and tap the cake pan gently to release the air bubbles and it also gets spread evenly.

5. Bake this cake at 350 F for 30 mins or till the cake is done. Do test with a toothpick and it must come clean.

6. Unmold the cake when completely cooled.

7. Chocolate Frosting : Whip the softened butter with cocoa powder, salt, vanilla essence and milk. 
* Make sure all the ingredients are at room temperature.

8. When all the ingredients are well blended, in small batches add the confectionery sugar and whip again. Repeat until you finish the sugar and see soft peaks of the frosting.

9. Decorate the cooled cake with this frosting and refrigerate before you serve.


Slice in and relish the tasty, soft and spongy chocolate cake..

Blueberry Pancakes ~ An English Breakfast (Egg Free)
