Tricolor Kaju Barfi ~ All natural colors & flavors

Festivals and occasions are incomplete for us without Indian sweets. Kaju barfi is one of the most favorite sweets for Indians.
This tricolor barfi is all made with natural coloring and flavoring ingredients.

As Saffron represent the strength, sacrifice and courage, carrot dived into the barfi to give it an orange color and a carrot flavor to form, the Carrot Barfi. 

As White stands for the honesty, peace and truth, kaju took its natural color to form, the White Kaju Barfi. 

As Green by color represents the fertility, growth and faith & auspiciousness of the land, spinach made the barfi wear the cool green look to form, the Spinach Green Barfi.




Ingredients :

- Carrot - 1 big fat or 3 small thin
- Spinach - 1 bunch
- Cashews / Kaju - 14 oz or 400 gms
- Sugar - 3 cups
- Milk Powder - 1/2 cup or 40gms
- Water - 1 1/2 cup
- Ghee - 5tbsps


Pre - Process :

1. Carefully in batches blend the cashews / kajus into fine powder. This must be done in pulse mode or else it will turn creamy.

2. Sieve the cashews powder every time and the left overs can be blended again. This must be done patiently.


3. After all the cashews are powdered, add the milk powder and mix well.


4. Now as we are making 3 different flavors, measure and divide the flour equally. 

5. I was able to divide the flour into 1 1/2 cup for each flavor and used 1 cup sugar for each.



Recipe :

Orange Carrot Barfi -

1. Grate the carrot to very fine.

2. Now in a pan add 2 tbsps of ghee and fry the carrot. There should be no raw smell left and the grated carrot will turn into pale orange color. 


3. Now add 1 cup of sugar and 1/2 cup of water. Stir and let this boil to 2 strings consistency.


4. Test the sugar syrup drop between your fingers and if you see 2 strings, turn off the flame. Add the cashews powder and mix well without lumps.


5. Spread it in the pan and leave for 10-15 mins. Then transfer it to a ghee greased plate and spread equally.


6. Slightly cut into your desired shapes. Let this dry off completely and then cut again and pull apart.


Orange Carrot Barfi is ready.. 


White Kaju Barfi :

1. In a pan, add 1 cup of sugar and 1/2 cup of water.

2. Stir and let this boil to 2 strings consistency. 

3. Test the sugar syrup drop between your fingers and if you see 2 strings, turn off the flame. Add the cashews powder and mix well without lumps.

4. Spread it in the pan and leave for 10-15 mins. Then transfer it to a ghee greased plate and spread equally.

5. Slightly cut into your desired shapes. Let this dry off completely and then cut again and pull apart.


White Kaju Barfi is ready.. 


Spinach Green Barfi :

1. Boil the cleaned spinach leaves for 5-10 mins.


2. Drain the water and run some cold water on them. 


3. Now blend these leaves into smooth paste. Use very little water if needed.

4. In a pan, heat 1 tbps of ghee and fry the spinach paste. The paste should be completely cooked and there should be no raw smell left.

5. Now add 1 cup of sugar and 1/2 cup of water. Stir and boil till it reaches 2 strings consistency.


6. Test the sugar syrup drop between your fingers and if you see 2 strings, turn off the flame. Add the cashews powder and mix well without lumps.

7. Spread it in the pan and leave for 10-15 mins. Then transfer it to a ghee greased plate and spread equally.


8. Slightly cut into your desired shapes. Let this dry off completely and then cut again and pull apart.

Spinach Green Barfi is ready too..

Alu Baath

This is a simple flavor rice, with no onion , no garlic..
