Tomato Corn Pulav ~ A one pot meal


The goodness of Tomato and flavor of the spices, makes this an easy to prepare one pot meal. 




Ingredients :
— Chopped tomatoes - 1 ½ tomato
— Sliced Onions -   1 medium onion
— Green chillies - 3-4
— Broken Cashews - 1/4 cup
— Jeera - 1 tsp
— Bay leaves - 1-2
— Curd - 1/4 cup
— Corn - 1 cup
— Chopped Coriander 
— Basmati Rice - 2 cups
— Ghee - 1 tbsp 
— Oil - 1 ½ tbsps

For Masala Paste
— Cloves - 4-5 
— Biryani Stick - 1
— Cinnamon - 1 inch
— Jeera - 1tsp
— Coriander seeds - 1 tsp
— Kasuri methi - 1 tsp
— Ginger - 1inch 
— Garlic - 3-4 pods
— Sliced onion - 1 cup
— Pudina 
— Peppercorns - 1 tsp
— Green chillies - 3-4

Recipe :

1. For Masala paste, add all the ingredients to the blender and using very little water blend into a smooth paste. 
2. Heat a pressure cooker, add Jeera, bay leaves, slit and cashews.
3. Add sliced onions and slit green chilles. Fry till onions turn translucent.
3. Add and mix the masala paste prepared above.
4. When raw smells wades off, add corn and tomato pieces. Mix and add salt, turmeric and chilli powder. 

5. When oil starts oozing out in 5mins, add curd and mix,
6. Add washed rice and fry for 2mins. 

7. Add 4 cups of water and check for the spices. Add chopped coriander and pudina, mix properly.
8. Pressure cook for 2 whistles and turn off the heat.

9. When without breaking rice when cooled.
