A Bread Styled ~ Lemon Cake

Lemon flavor always stands out from the very usuals. This is an eggless lemon cake fermented with yeast. Hence, this can be called as a Lemon Bread cake... 



Ingredients :
— All purpose flour / Maida - 1 ⅓ cup
— Sugar - 1/2 cup + 3tbsps
— Lemon Juice - 4 tbsps
— Lemon Zest - 1tsp (grated lemon peel)
— Instant Yeast - 1/2 tsp
— Milk - 1 ¼ cup (room temperature)
— Any light Oil - 1/4 cup

Icing
— Icing Sugar - 1/2 cup
— Lemon juice 


Recipe :

1. Mix all purpose flour / maida, sugar, lemon zest and yeast together.
2. Add oil, milk and lemon juice. Mix slowly to form a thick batter.
3. Now put a cling sheet around the bowl and let this rest for 1-2 hrs. Wait until the batter doubles its volume.
4. After 1-2 hrs you will see a slight rise in the dough.
**This batter will not raise like the usual bread dough we mix with yeast.

5. Now grease your cake tin and pour in the batter. Let this sit for 10-15mins again.
6. Bake this in a pre-heated oven at 350°C for 45-50mins or till the cake is completely done.
Tooth pick or knife should come clean when inserted. 

7. De-mould when half cooled and squeeze lemon juice on top of it.This gives a very intense lemon flavor to the cake.
This add a dashful of extra lemonous flavor to the cake. 


8. Now mix icing sugar and lemon juice together and pour over the cake.
