Blueberry Pie ~ A berrylicious pie


Pies make a great dessert recommendation. 
Made out of the pastry dough and filled inside with wonderful fillings they become all time desserts.



Ingredients :
— Blueberries (Fresh / Canned) - 2 ½ cups
— Sugar - 2/3 cup
— Cornstarch - 1/4 cup
— Lemon juice - 1 tbsp
— Vanilla essence - 1 tsp
— All purpose flour /Maida - 2 ½ cups
— Butter (Cold) - 1 cup
— Salt - 1¼ tsp
— Water - 1/2 cup

Recipe :

1. In a mixing bowl, add flour, salt and pieces of butter.

2. Crumble the butter and mix into the dough slowly.

3. The dough should hold shape when mixed properly.
4. Add water little by little and form the dough.
5. Refrigerate the dough for 1 hr.
6. In a pan, add blueberries, sugar and cornstarch. Mix and cook on medium flame.
7. A syrup starts forming and blueberries will become soft.
8. Now add the vanilla and lemon juice. Mix and keep aside.
9. Take the dough out and divide it into 2 parts.
10. Roll out one part slightly bigger than the pie mould. 
11. Now place this on the the mould and slightly press it on the edges of the bottom.
12. Using knife cut and pull out the extra edges.
13. Pour the blueberry filling and level up.

14. Roll out the other part and place on top of this pie like a lid.
15. Now cut the extra edges and join the upper and lower pastry dough.

16. Pinch the edges to give the pie shape. 
17. Now slight make slits on the surface of the pie.
18. Now apply milk on the surface of the pie and sprinkle some sugar on top. 
19. Now bake this pie in a pre-heated oven at 400°F for 30-35 minutes.

20. Demould, slice it and dig into the hot pie. You can also add some whipped cream on top.
This tastes good even when cooled.
