Ingredients:

— Besan - 2 cups
— Sugar - 1 cup
— Water - 2 cups
— Elachi powder - 1 tsp
— Food colors - Yellow, Green, Orange (Optional)
— Salt - 1/4 tsp
— Oil - for frying
— Lemon juice - half lemon

Recipe :

1. In a mixing bowl, add besan, salt and mix. Add 1 cup of water slowly and mix the besan without lumps.
2. The batter should be runny.
3. Optional — In 2 separate cups take out around 2 tbsp of besan batter each. In the bowl with major quantity , you can add yellow color or turmeric. In the separate cups you can add orange and green accordingly.
Mix well so that the color blends in.
4. Heat oil, take the spatula that has holes or oil strainer spatula and a spoon to pour the batter. Now take a spoon full and pour over the holes spatula. Keep moving so that the batter drops like drops into the hot oil.
5. Let the droplets fry for 1-2 mins, then they will raise up. You can now take them out into tissue paper plate.
5. Finish the complete batter of yellow, green and orange. Fry the boondi properly.
6. When the boondi is cooled, take this in batches and put them in a blender.
7. This is very important step, blend this boondi only on pulse mode so that it crushes slightly.
8. Sugar Syrup Preparation : For 1 cup of water add 1/2 cup and boil for 5 mins.
9. Now add elachi powder and lemon juice. Mix well.
10. Add the crushed boondi and mix so that the boondi soaks well.
11. Turn off the heat and close the lid. Wait for 5mins and then transfer to a plate so that it cools.
Add chopped cashews to this.
12. When cooled mix the nuts and shape the laddoos.
