Sweet Pumpkin Curry / Teepi Gummadi koora

Pies, curries, dumplings and many more dishes are prepared with this pumpkin. Traditional recipes have great place in the Indian cuisine..



Ingredients :

— Pumpkin pieces - 1 cup of big pieces or 12-15 pieces
— Jeera - 1/2 tsp
— Mustard seeds - 1/2 tsp
— Jaggery / bellam - 1/4 cup grated
— Turmeric - 1/2 tsp
— Salt - 1/2 tsp
— Dry red chillies - 3-4
— Curry Leaves - 4-5
— Green chillies - 2-3
— Chilli Powder - 1/2 tsp
— Hing
— Oil - 1 tbsp 

Recipe :

1. Cut the pumpkin into big chunk pieces. If its chopped to small pieces then the curry will be mashed completely.
2. In a pan, heat oil and add jeera, mustard seeds, dry red chillies, curry leaves, green chillies and hing. Let this fry for a min.
3. Now add the pumpkin chunks. Add turmeric , 1/2 spoon red chilli powder and very little salt. 
4. Close the lid and cook for 5mins.
5. Dont keep mixing the curry with spatula. Instead lift the pan and try tossing. This is important because the more you mix with spatula the curry becomes more mashed.
6. Add jaggery when pumpkin is half cooked 
and close the lid.
7. Cook this on very low flame, the pumpkin pieces will nicely absorb the flavors. Adjust the sweetness and spices if needed. 

Serve hot with rice or rotis...
