— Water - 3/4 cup
— Yellow food color gel (optional)

Ice cream Recipe :

1. In a mixing bowl mix together, mango pulp and condensed milk.
2. In another bowl, add whipping cream and sugar.
** If you are using sweetened whipping cream then you can avoid sugar, but check the sweetness of the mango before you whip.
3. Whip it with hand blender untill you reach stiff peaks.
** When you turn the bowl upside down nothing should drip.
4. Start adding the mango pulp in batches and fold with spatula.
** Dont rigorously mix only fold.

5. When completely mixed, transfer into a mould. You can add mango chunks as layers or mango pulp and twirl.

6. Seal tight with plastic wrap and freeze this for 4hrs or till it hardens.
7. You can serve when it hardens.
8. Now take an eggs mould or cup cake holder or any holder that has hole impressions. Spread the plastic foil and place scoops of ice-cream balls. Freeze this until it hardens.

9. When this hardens, you can start preparing the rice flour base.
In a pan mix rice flour, sugar and water without lumps.
10. Now cook on medium flame until a dough is formed.
11. Using corn flour, roll it out like chapathi dough. Freeze until it hardens.
12. When this hardens cut rounds and place each one on plastic foils. You can also add gel and form yellow color dough too.
13. Now take one small rice flour roti and place the frozen ice cream ball in it.
14. Carefully close the ball using hands and twist the extra plastic cover to form the ball.
* Dont mess up with fingers.
15. When you finish wrapping all the frozen ice cream balls, place them back in the mould and freeze for 2 more hours.
16. When the balls harden, unwrap from the plastic foil and roll little in cornstarch.
