Coriander Rice / Kothimeera Rice ~ One pot meal


Easy - Peasy one pot meals are always day savers.. Presenting you another yummy one pot meal, that has the freshness of the corriander loaded with aromatic basmati rice...



Ingredients :
— Basmati rice - 2cups
— Fresh Corriander - 1 ½ - 2 bunches
— Green Peas - 1 cup
— Onion - 1 medium
— Slit Green chillies - 5-6
— Ginger Garlic paste / chopped or grated
— Curd - 1/4 cup
— Salt
— Chilli powder
— Jeera Corriander powder
— Garam Masala
— Ghee - 1 tbsp
— Oil - 2tbsps
— Dry biryani Spices
— Water - 4 cups
— Cashews - handful

Recipe :

1. In a pressure cooker, heat oil and ghee. Fry dry biryani spices.
2. Now add ginger garlic, cashews and slit green chillies and fry for a minute.
3. Add chopped onions and fry till onions become translucent. 
4. Add green peas and fry for 5 more minutes.
** Used frozen peas. 
5. Now add chopped fresh corriander. Mix everything and cook with lid half closed for 5mins.
6. Add Curd, salt and spice powders. Mix and cook till flavors are absorbed.
7. Add washed basmati rice and mix carefully. Let this fry for 2mins.
8. Pour water and check for the spices. Adjust salt and others if necessary.
9. Pressure cook for 2 whistles and open the lid when cooled. 
10. Enjoy the tasty corriander rice with raita and salad.
