Veg Schezwan Fried rice



Fried rice is another popular IndoChineese dish we Indians love to eat. There are different variations of fried rice, lets explore the Schezwan flavour.



Ingredients :
- Onions - 1 medium 
- Capcicum /Bell peppers - 1/4 cup chopped 
- Cabbage - 1/4 cup chopped 
- Green chillies - 4 long slit
- Corriander - half bunch
- Green peas - 1/4 cup
- Carrots - 1/4 cup chopped 
- Potato - 1/4 cup chopped 
- Beans - 1/4 cup
- Garlic - 1tbsp chopped 
- Oil - 2 tbsps 
- Schezwan Chutney - 3 tbsps
- Salt
- Cooked rice - 6/7 cups (can you leftover rice or freshly cooked)
- Lemon - half piece or Vinegar 1tsp

Recipe :

1. Boil Carrots, Beans, Potatoes and Green peas with little salt. Strain and put aside. 
**Dnt turn them mushy. 
2. Also chop the other vegetables. 
3. In a pan, add oil and fry the chopped garlic.

4. When you observe nice garlic smell and garlic starts turning brown, add the chopped onions. 
** Make sure that onions dont get burnt. 

5. After onions turn translucent, add chopped cabbage, capsicum and slit green chillies. Let this fry for 5mins. 
6. Now add the boiled vegetables to this mixture.
7. Add salt, and pepper powder. Both of these can be adjusted as per your taste. 
Mix well. 
8. Now add 3tbps of Kissan Schezwan sauce to this mixture. 
Mix well. 
9. Now turn off the stove and add lemon or vinegar to the vegetables. Mix well 
10.  The Schezwan vegetables mix is now ready. You can mix this paste to the cooked rice.
11. Add the chopped corriander too.
12. Mix well without breaking the rice.
Hot pipping Veg Schezwan fried rice is now ready to be served. You can also serve with sliced onions, lemons and raita.
