Thokuddu Laddoo

Thokkudu laddoo is one of the many famous delicacies that originated in our Andhra Pradesh.
Come lets immerse in its taste. 




Ingredients

° 1 cup of Besan
° 1 cup of Sugar
° 1tsp Elachi powder
° Oil (for deep frying)
° 1tbsp Ghee
° Chakli maker
° A pinch of Salt
° Water

Recipe

1. In a pan for deep frying, start heating the oil.

2. Take a cup of besan and sieve into a mixing bowl with a pinch of salt.



3. Add little by little water and make a thick batter of the besan. 


4. Take the chakli maker with either muruku blade or the sev blade. Grease the chakli maker inside with oil.  


                         

5. Fill in the chakli maker with the besan batter and close it.


6. When the oil is properly heated, pour the batter using the chakli maker. Let this just fry, it need not turn very crispy. 


7. After it is fried take the sev into a plate with tissue paper. 

8. Lets start making the sugar syrup now. In a pan on the stove, take 1 cup of sugar with 1/2 cup of water. 



9. Bring this to boil. The sugar should completely dissolve and the syrup should become sticky and come close to 1 string consistency.

10. While sugar syrup is getting prepared, take the sev into a blender and blend it into coarse powder.


11. When sugar syrup is ready, add the coarse sev powder little by little. There should not be any lumps. Keep mixing without burning the base

12. Add 1tbsp of ghee and keep stirring until the besan leaves the sides of the pan.


13. Add the elachi powder and blend properly.

14. Spread on a plate and make laddoos when it is little cooled.

Bachalikura / Malabar Spinach Majjiga Pulusu

Malabar Spinach / Bachali kura  is widely part of the traditional Indian cuisine. These green leaves are rich  in vitamin A , C , iron and calcium.
