Mango Sambar


Mangifera Indica commonly known with names like Mango, Aam, Mamidikaya.. It is rich in Vit A & E.
Summer and mangoes are a hit combo no matter in which form you consume.
Here lets explore the core South Indian dish Sambar, combined with raw mangoes.

 

Ingredients :

— Very Sour Raw mango chopped to big pieces - 1cup
— Onions - 1cup
— Tomatoes - 1cup
— Green chillies 3-4
— 1tbsp tamrind juice
— Green curry leaves - a bunch
— Cooked dal - 1cup
— Drumsticks long chopped - 6-7 pieces
— Methi seeds - 1/2tsp
— Jeera seeds - 1/2 tsp 
— Oil - 2tbsps
— Grated fresh coconut - 1tbsp 
— Salt
— Turmeric powder 
— Chilli powder 
— Jeera & corriander powder 
— Sambar powder 

For Tempering :
— Mustard seeds - 1/2 tsp 
— Jeera seeds - 1/2 tsp 
— Channa dal - 1/2 tsp 
— Urad dal - 1/2 tsp 
— Dry red chillies - 4-5
— Curry leaves - 6-8
— Ghee - 1tbsp 

Recipe :

1. Pressure cook dal. It should cook very soft. 

2. In a pan, heat oil and add 1/2 tsp each of Jeera seeds, Methi seeds and few curry leaves. 

3. Now add Onions and fry till they turn translucent. 
4. Now add in the tomatoes and cook till they turn soft.
5.  Then add the mangoes with salt & turmeric.
6. You can add the drumsticks now. Mix and close the lid to cook soft for 5mins.

7. Add water after now and let this boil for 15-20mins. The mango chunks and drumsticks needs to be completely cooked.
8. Add Sambar powder as per your taste or 1tbsp and mash along with the dal.
9. When sambar starts boiling and veggies are completely cooked, add the mashed dal and tamrind juice. 
10.  When it is boiling, add coconut.
11. Temper the seeds with ghee and add to the mango sambar.
12. Mix and enjoy with steamed rice / idly / vada / dosas.
