Raw Plantain Chutney / Aritikaya Chutney


Chutneys are a very important part of the Indian cuisine. Meal is often considered incomplete in the southern part of the India without chutney. 
Can you ever imagine our famous snacks or rice dishes without those wide range of chutneys?  
Its hard right? 
So, here we bring you raw plantain chutney that pairs the hot piping steamed rice or roti. 



Ingredients:
~ 1 - Tender raw plantain / Aritikaya 
~ 1/2 Lemon
~ 4/5 Green chillis
~ 1 inch Ginger piece 
~ 1/2 tsp Turmeric
~ Salt - as per taste

For tempering:
~ 1 tsp Urad dal 
~ 1tsp Chana dal
~ 1/2tsp Mustard seeds
~ 2 strands of Curry leaves
~ 2tbsp Oil

Recipe

1. Neatly wash a plantain / aritikaya and clean with a tissue or clean cloth.

2. Apply oil to the plantain and roat on medium flame. The peel should turn black and the plantain will get cooked, becomes soft as an indication. 

3. Once the plantain has cooled, peel off the skin.


4. Mash the plantain using blender / masher and keep aside.  
** Use pulse mode in blender to mash. 


5. Chop green chilles and ginger to small small pieces that can be crushed. Use mortel to crush or grind using a blender.
**Crushing in mortel gives a nice flavor to the dish. 
6. Lets start tempering the chutney now
In a pan take oil and add all the tempering ingredients like mustard seeds, channa dal, urad dal dcurry leaves. Let them splutter.
7.  Turn off the heat and add crushed ginger-green chillies paste and mashed plantains. Also add salt and mix. 
8. Now once this is completely cooled add lemon as per taste, turmeric and adjust the spices.
**We avoid adding lemon juice to hot dishes to avoid them turning to bitter 
Enjoy the pleasure of the chutney with hot steamed rice or rotis.
