Vankai chilakada dumpa Pulusu using Mango / Brinjal Sweetpotato Stew using raw mango


Generally known for its tangy, hot and spicy taste, Pulusu is well known dish in the Andhra and Telangana thallis. 




Ingredients:
-- Veggies slit length wise
        Long Brinjals - 1/2 cup  
        Sweet potato - 1/3 cup
        Onion - 1 medium
        Green chillies - 4
-- mango sliced - 1/4 cup 
-- Oil - 3 table spoons
-- salt as per taste
-- water 1 Cup
-- Chilli powder - 1+1/2 tspoon
-- Turmeric 1/2 tspoon
-- Curry Leaves - 1 strand
-- Jaggery - 2 inches cube
-- methi seeds - 1/4 tspoon
-- mustard seeds - 1/2 tspoon
-- red chillies - 2 cut into pieces
-- Corriander for garnish

Recipe :

1. Heat Kadai , add Oil , after heating, add methi nd mustard seeds 
2. Once mustard seeds start splattering , add curry leaves, red chillies

3. Once aroma start coming from methi nd chillies add onions and green chillies
4. Fry till onions turn transculent, make sure onions donot turn brown
5. Now add Sweet potato pieces and then Brinjal pieces

6. Saute for few mins till sweetpotato nd brinjal start turning soft
7. Add mango slices
8. Slightly fry them then add Salt
9.  Mix well, cook for 5mins by covering with lid,  Now add turmeric nd chilli powder
10. Fry well , then add cup water
11. Add jaggery, Cover with lid, Let boil on medium flame for 5 mins
12. Adjust salt, jaggery, nd spice as per taste. Boil and Check consistency (should be soupy but not too thick)
13. Turn off Stove and garnish with chopped coriander
Enjoy with Rice nd Ghee

Malabar Spinach / Bachali kura  is widely part of the traditional Indian cuisine. These green leaves are rich  in vitamin A , C , iron and calcium.
