Masala Khara Buns - A company for your chai..






A spicy bun and a great snack that accompanies the wonderful tea.. 



Ingredients


- 2 tbsps Activated Yeast
- 1/2 tsp Sugar
- 1 tsp Salt (adjust as per taste)
- 2 cups All Purpose flour / Maida
- 1/2 cup finely chopped Onions
- 2 finely chopped Green Chillies
- 1tsp Jeera
- 1tsp Sesame seeds
- chopped Mint leaves
- 1/4 cup buttermilk
- 1/4 cup oil
- 1/4 cup warm water
- 2 tsps butter
- 1/4 tsps each of Oregano, red chilli flakes, mixed herbs (optional) 



How to activate yeast? 

1. You will need Active Dry Yeast.

2. Take 1/2 lukewarm water and add pinch of sugar. 


3. Dissolve the sugar and sprinkle some yeast into it.


4. Mix and let the yeast be dissolved into the water.


5. It turns little sticky.


6. Now cover the yeast cup and let it turn forthy.


7. The yeast is activated and ready to use. 


Recipes

1. Take a bowl, add the flour, activated yeast, salt, sugar, chopped onions, chopped green chillies, jeera, sesame seeds. 


2. Mix the ingredients properly and spread them evenly. 

3. Now add buttermilk, oil and water. Knead properly for 10mins to form a soft dough. 


4. Grease the dough with oil.


5. Cover the dough and let it rest for 1hr or till the volume doubles.


6. The dough will become very fluffy and rise well.


7. Knead and divide into balls.


8. Grease the baking tray with butter and semolina.


9. Tuck the dough balls and place them on the trays.


10. In a small cup take some butter and add 1/4 tsps of oregano, mixed herbs, red chilli flakes.
You can also avoid above all and grease dough balls with butter alone.


11. Bake the buns at 200°C / 375° F for 18 mins in a pre-heated oven.


12. After 18mins, the buns are all ready.
Sit back and enjoy with hot tea.



Tips


1. You need to completely wait till the dough raises even it takes more than 1hr.

2. What can you do when there is no yogurt for this recipe?

Add 1tsp of vinegar to 1/2 cup milk. Mix well and let ot curdle for 20-30mins. Then add it in place of yogurt.
