Mango Semolina Cake (eggless / vegan)



Summers, holidays and mangoes.. Many ways to eat a mango, check this one out too... A dish that kids can make too.. 




Ingredients


Preparation Time : 40mins 
Baking Time : 30-35mins
Baking Temperature : 180°C  / 350°F


- 1 1/2 cup Mango puree
- 1 cup Semolina / rava
- 3/4 cup Sugar
- 1/4 cup Oil (any light oil) 
- 3/4 tsps Baking powder 
- 1/4 tsp Baking soda 
- 1/2 tsp elachi / cardamom powder 
- 1/2 tsp vanilla essence 
- pinch of salt 
- tutti frutti / chocolate chips / nuts 



Recipe


1. You can choose store bought mango pulp or make a thick paste of mangoes. The pulp should be 1 1/2 cup. 

2. Mix the mango pulp and sugar. Let the sugar dissolve. 



3. Now add 1/4  cup oil and 1/2 tsp vanilla essense. 


4. Let the oil be blended into the pulp completely. 


5. To this mixture, add 1 cup semolina / rava, 3/4 tsp baking powder, 1/2 tsp baking soda and the pinch of salt.

6. The Semolina should be mixed without any lumps. Add elachi / cardamom powder to this and mix again.

7. Let the cake batter sit still for 20mins. The Semolina needs to absorb and the batter turns thick.

8. After the batter is set, transfer this into a greased cake mould.

9. Bake the cake in a pre-heated oven at 180 °C / 350 °F for 30-35mins.

10. Demould and cut into desirable shapes after it is completely cooled.

Presenting a wonderful cake from the Dalgona family. This is a no Oven, no Butter and no Egg cake. Simple and easy to bake.
