Breakfast Mini Savory Muffins ~ Healthy and guilt free


Muffins look more like cupcakes without frosting and can be made sweet or savory. 
Here, we tried to replace the usual muffin flour from maida to make it more tasty and healthy. Packed in this muffins you will get the goodness of wheat flour, jowar flour, ragi flour, nuts, chia seeds and a lot more of guilt free satisfaction.

This muffin mix will be great for fuzzy eating kids and a great choice for adults too.

Savory Muffins are a spicy way of eating the very old style. These can be served as a healthy breakfast or can be a great party snacks.



Ingredients :

- Wheat flour - 1/4 c
- Jowar flour - 1/4 cup
- Ragi flour - 2 tb
- Almonds - 5
- Cashews - 5
- Walnuts - 5
- Sunflower seeds - 2 tbsps
- Granola / Oats - 1/4 cup
- Chia seeds - 2 tsps
- Peppercorns - 1/2 tsp
- Jeera - 1/2 tsp
- Carrom seeds / Ajwain - 1/4 tsp
- Kasuri Methi - 1/2 tsp
- Baking Soda - 1/2 tsp
- Baking Powder - 1 tsp
- Salt - as required
- Water - 1/2 cup
- Oil - 3 tbsps
- Chilli Powder - 1 tsp
- Finely chopped Veggies of your choice - 1/4 cup (Onions,tomatoes, carrots, peas, bellpeppers, broccoli) - Curd - 1/2 cup

Recipe :

  1. Dry roast all the nuts, when color start to change add granola / oats. Roast till nice aroma comes. Keep aside and let it cool.
  2. When cooled blend into powder, half way thru add chia seeds and powder finely. This is our protein mix.
  3. Dry roast peppercorns, jeera, kasuri methi & ajwain. Turn off the heat when nice aroma comes. When cooled make fine powder and keep aside. This is the masala powder.
  4. Now sieve all the three flours - wheat, jowar & ragi. Then add the protein mix also. If tiny chunks are left you can either blend again or mix as is.
  5. Now add the finely chopped veggies, salt, chilli powder & curd. Save some veggies to add on top at last. Mix well.
  6. Adjust consistency and mix well using water. There should be no lumps. The consistency should neither be hard nor flowing.
  7. Add oil and check for the spices and adjust if needed.
  8. Grease the muffin tray with oil and fill them up with a spoon. Have even tops and add some veggies or peas on top of the muffins.
  9. Bake these muffins in a pre-heated oven at 350 F for 25-30 mins. These muffins should be perfectly baked and toothpick should come clean.
  10. Brush some butter on top of the hot muffins. De-mould when half cooled.
Relish when hot.. These are great for breakfast / snacks.

Presenting a wonderful cake from the Dalgona family. This is a no Oven, no Butter and no Egg cake. Simple and easy to bake.
